Paleo Potluck and other Recipes…


Crawfish and peppers (Ryan):
1 pack crawfish
~1 large bell pepper
1 sweet onion
3 cloves garlic
Salt, black pepper, red pepper to taste
Cut onions and bp in 3/4 in dice
Slice garlic
Sauté onions, bp, garlic for a few minutes in olive oil
Add crawfish continue cooking until onions are translucent.
(this is my attempt at what they call crawfish camp style at pats in Henderson)
I steamed one head of cauliflower a little on the soft side and used like rice.

Yummy Potluck Carrots (Ryan):
Slice carrots
Dice sweet onion
Heat pan on medium, add oil (when non Paleo I use butter)
Add carrots and onions
Add salt and small amount of cayenne pepper to taste
Adjust heat to partially caramelize onions and carrots
Once some browning occurs reduce heat and cover
Cook until carrots reach desired tenderness
(also when non Paleo I add a bit of sugar or honey to make a better glaze)
Cinnamon can be swapped with cayenne for a different taste and non
spicy version.

Garlic Chicken Bake (Lauren) :
6 chicken breast cut in halves (makes 12) (not frozen)
green beans
carrots
bellpeppers
mushrooms
chicken broth
garlic clove

Season chicken with sea salt and whatever spices wanted. Cut garlic into small pieces, place into aluminum foil, add extra virgin olive oil over the garlic and place in oven at 400 degrees for about 10 minutes. Place seasoned chicken in baking dish and put roasted garlic over chicken. Pour broth in dish til it fills halfway up the chicken. Cover baking dish and place in oven. Chicken will bake for about an hour and a half. Once the chicken has been in the oven for about 40 mins, take out, place veggies, recover and put back in oven. for the last 10 mins, remove covering and finish baking.
